Many of the worlds leading health organisations now recommend a reduction in the amount of meat we consume. In fact, going meatless a few days of week can reduce your risk of preventable health conditions such as cardiovascular disease, obesity, high blood pressure and diabetes, while at the same time reducing your carbon footprint.

Leaving meat off your plate a few days a week is also a great wait to save money. With the price of meat products on the rise, now is the perfect time to incorporate nutritious meat alternatives into your lifestyle and explore the other options on the market. You don’t have to go cold turkey (pardon the pun). All you need to do is ease yourself into some meatless meals and slowly increase the number of vegetarian meals on your weekly menu.

Thai Salad and Garlic, Sesame and Lime Dressing
(Serves 2)

What You’ll Need

Vegie Delights Thai Chilli and Lime Cakes

For the salad:

1 cup cabbage, chopped
1/2 cup capsicum, chopped
1 carrot, shredded
3 sprigs of spring onion, chopped
1/2 cup coriander, chopped
1/2 cup cashews, chopped
1/2 cup shelled sugar snap peas

For the dressing:

1 tbsp sesame seeds
2 tbsp soy sauce
2 cloves crushed garlic
Juice of half a lime
1/4 cup canola oil
1/2 tbsp lemongrass paste
1 tbsp white wine vinegar
1 tbsp maple syrup

Method

1. Blend all dressing ingredients and set aside.
2. Mix all salad ingredients and set aside.
3. Cook Veggie Delights Thai Chilli and Lime Cakes and place on top of the salad.
4. Drizzle with dressing and enjoy!

* Garnish with fresh chilli some avocado slices
** Keep your dressing separate to ensure the salad stays fresher and crisper for longer
